🍷 Ancestral method
The oldest method: wine is bottled before fermentation ends, so the gas builds up in the bottle.
The ancestral method is the oldest way to make sparkling wine. The name means "of the ancestors". The wine is bottled before the first fermentation has finished. The remaining sugar keeps fermenting in the bottle, and the carbon dioxide stays inside. This is how bubbles appear.
Unlike the traditional method used for Champagne, there is no second fermentation with added sugar and yeast. There is also no removal of the sediment. So such wine is often slightly cloudy, with light pressure and low strength. The taste is fresh and yeasty, often with some residual sweetness.
The method came from France and is still used in several places. Blanquette de Limoux, Clairette de Die and modern pet-nat, short for "natural sparkling", come from it.
It is an example of how the simplest way to make bubbles came back into fashion among lovers of natural wine.
