Sparkling wine only from the French Champagne region, made by the traditional method.

Champagne is sparkling wine that may only be made in the Champagne region of France, east of Paris. The name is protected as a designation of origin. The wine must be made by the traditional method: the second fermentation happens in the bottle, and that is where the bubbles come from.

The main grapes are Chardonnay, Pinot Noir and Pinot Meunier. White Chardonnay gives blanc de blancs, dark grapes give blanc de noirs. Most Champagne is non-vintage, a blend of several years. Vintage Champagne comes from a single good year. There is also rosé Champagne, prestige cuvées from the top houses, and grower Champagne made by the vineyard owner.

Ageing on the lees shapes the style. Non-vintage Champagne must age at least 15 months before release, vintage at least 3 years. The dosage sets the sweetness, from brut to sweet. Villages are ranked on the Champagne cru scale. Similar wines are made elsewhere, such as Crémant in France and English sparkling wine, but they cannot be called Champagne.
