Wine with bubbles of carbon dioxide produced by a second fermentation.

Sparkling wine is wine with bubbles. The bubbles are carbon dioxide that stays in the drink after a second fermentation. When the bottle is opened, the gas rises in fine bubbles. Under European Union rules, the pressure inside a closed bottle must be at least 3 atmospheres.

Sparkling wine is made in different ways. In one method the second fermentation happens right in the bottle; in another, in a large sealed tank. The base wine is usually light and tart, so the finished wine tastes fresh. It can be dry, off-dry or sweet.

Sparkling wines are made in many places: Western Styria, the Moselle, Saumur, Bordeaux (Crémant de Bordeaux) and Plešivica in Croatia. Many grapes are used, among them Erbaluce, Pinot Blanc, Elbling, Malvasia and Freisa. The grape is often named on the label. Sparkling wine is served cold, in a narrow glass or flute. After the bottle is opened the bubbles slowly fade, so it is best finished the same day.

Frequently asked questions

How is sparkling wine different from champagne?

Champagne is sparkling wine from the Champagne region of France. Sparkling wine is the general name for any wine with bubbles, wherever it is made.

Where do the bubbles come from?

What pressure is in a bottle of sparkling wine?

At least 3 atmospheres under EU rules. That is why the bottles are thick glass with a strong closure.

⚠️ Wine contains alcohol: adults only, drink in moderation. Wine usually contains sulphites; egg white or milk proteins are sometimes used for fining — important for allergies and for vegans.
