🕳️ Cellar

Also known as: root cellar

Traditional cool storage for milk and sour cream.

A cellar is an underground or half-underground room for storing food. Before fridges, it was one of the main places to keep milk, sour cream, cream and butter, as well as vegetables.

A cellar works thanks to the earth. Underground, the temperature hardly changes: in winter it does not freeze there, and in summer it stays cool. Many foods keep longest at a temperature just above zero, around 0 to +2 °C, with high humidity. So the cellar helped keep the harvest until spring.

Other methods were used for milk too. For example, a small building was put up over a cold spring — in English, a springhouse. The cold spring water cooled the milk. Such buildings were common in the countryside until electricity reached it. With home fridges, cellars were needed less often. But many country homes still use them — for potatoes, pickles and jam.
