Also known as: East Europe

A fermented-milk culture: tvorog, sour cream, ryazhenka, varenets, soured milk.

Eastern Europe is the eastern part of Europe, mostly flat, with forests, meadows and fields. The East European Plain, with its forests and meadows, is cow’s milk country. Short summers and long winters made souring and slow-baking in the oven the main ways to keep milk. Hence a rich culture of fermented milk.

Tvorog, fresh curd cheese (called “syr” in Ukraine), is made from soured milk by pressing out the whey; smetana, a thick sour cream, is skimmed from soured milk that has been left to stand. Ryazhenka is baked milk soured until thick, and varenets is its relative, traditionally slow-cooked in the oven. Prostokvasha, plain soured milk, formed by itself if milk was left somewhere warm. Tvorog goes into syrnyky (curd fritters), varenyky (dumplings) and bakes, while smetana is a must with borscht and many other dishes.

In the Carpathians and the west of the region a sheep’s milk tradition also survives — bryndza. Many fermented milk products are made industrially today, but home recipes are still alive.

Frequently asked questions

What is the difference between ryazhenka and varenets?

Both are made from baked milk; ryazhenka is usually soured until thick, while varenets was traditionally slow-cooked longer and is denser. The names are used differently in different places.

Why is tvorog called cheese in Ukraine?

That is how the language developed: fresh curd cheese (tvorog) is “syr” in Ukrainian.

How did prostokvasha come about?

Milk left somewhere warm sours by itself thanks to lactic acid bacteria — that is how prostokvasha was made long before industrial starters.
