Also known as: baked fermented milk

Fermented baked milk.

Ryazhenka is a fermented drink made from baked milk. First, cow’s milk (sometimes with added cream) is simmered for a long time at high temperature until it takes on a creamy colour and a caramel note. It is then cooled to about 40 °C and fermented with thermophilic lactic streptococci, sometimes together with Lactobacillus bulgaricus; fermentation takes about 3–6 hours.

Ryazhenka is traditional in East Slavic cooking, especially in Ukraine and Belarus. Historically it was made in clay pots in a masonry stove, where the milk simmered for many hours. Today it is a mass-market product made by dairy plants.

What sets ryazhenka apart from kefir and clabbered milk is its yellowish-brown colour, mild sweetish taste and thickness, which come from the Maillard reaction as the milk simmers. It differs from varenets mainly in the starter and the degree of reduction: varenets was traditionally soured with sour cream. Ryazhenka is drunk as a beverage, eaten with pastries and used in dough.

Frequently asked questions

What is the difference between ryazhenka and kefir?

Ryazhenka is made from baked milk and fermented with thermophilic bacteria, so it is beige and sweetish. Kefir is made from ordinary milk with kefir grains containing yeasts.

What is the difference between ryazhenka and varenets?

Both are made from baked milk. Varenets was traditionally soured with sour cream and its milk was reduced further; ryazhenka is fermented with thermophilic cultures.

Why is ryazhenka beige?

During long simmering, the milk’s sugars react with proteins (the Maillard reaction), giving a creamy colour and a caramel taste.
