Finnish "bread cheese", traditionally made from cow's colostrum: the curd is shaped into a flat round and baked until browned in spots. It used to be dried and kept for years.

Leipäjuusto (“bread cheese”) is a Finnish fresh cheese traditionally made from cow’s colostrum (the first milk after calving), and today more often from ordinary cow’s milk. The milk is curdled, the curd is shaped into a flat round disc 2–3 cm thick, and then baked, grilled or flambéed until browned or charred spots appear on the surface — hence the resemblance to bread and the name.

The cheese comes from Southern Ostrobothnia, northern Finland and Kainuu. In Kainuu it was historically called “juustoleipä”. Leipäjuusto used to be dried, and such cheese could keep for years; before eating, the dry, almost rock-hard pieces were warmed over a fire. Fresh cheese squeaks against the teeth when chewed, which is why in the US it is called “Finnish squeaky cheese”.

Leipäjuusto differs from halloumi in that it is baked during production rather than fried before serving; both cheeses hold their shape when heated. Traditionally it is served warm with cloudberry jam, or put in pieces into coffee (in Sweden it is “coffee cheese”).
