Ryazhenka vs varenets: what's the difference
Both drinks are made from baked milk, which gives them a creamy colour and a caramel note. The difference lies in how far the milk is reduced and what it is fermented with.
| 🧀 Ryazhenka | 🧀 Varenets | |
|---|---|---|
| Raw material | Baked cow's milk | Reduced baked milk: cooked down by at least a third, to a reddish tint |
| Starter | Thermophilic lactic streptococci and Lactobacillus bulgaricus | At home, sour cream (about 200 g per litre); in production, thermophilic streptococci |
| Fermentation time | 3–6 hours | 3–4 hours, covered, in a warm place |
| Taste and colour | Creamy colour, mild caramel flavour | Darker, with the rich taste of reduced milk |
| Variations | At home, sometimes baked in the oven until a brown skin forms | In the Urals and Siberia it was fermented with cream and served with tea |
| Origin | A traditional food of East Slavic cuisines | The same; related to Turkic katyk made from long-boiled milk |
Which to choose
If you like a mild, creamy taste, choose ryazhenka. If you prefer a richer caramel note and a thicker body, try varenets.
