Slovak bryndza is an EU-protected product; the dish bryndzové halušky.

Slovaks are a West Slavic people, the main population of Slovakia. Slovaks live in the mountainous country of the Western Carpathians, where sheep have grazed the mountain meadows for centuries. Shepherds known as Vlachs milked the sheep at summer camps called salaše, curdled the milk and made cheese. This gave rise to a tradition Slovaks are especially proud of.

The signature product is Slovak bryndza: a soft, salty, slightly tangy cheese made by grinding aged sheep’s cheese. Since 2008 the name “Slovenská bryndza” has been protected in the EU as a geographical indication; it must contain at least half sheep’s milk. Bryndza is the dressing for the national dish, bryndzové halušky: small potato dumplings with crispy bacon bits.

Sheep’s milk is also made into the smoked cheeses oštiepok and parenica, and the whey into a refreshing drink, žinčica. In summer, fresh bryndza is still sold at the salaše.
