🧀 Curd snack
Also known as: glazed curd snack, glazed curd, kohuke
A sweet curd-cheese dessert, often glazed.
A tvorog bar (tvorozhny syrok) is a single-serving sweet product made from tvorog (curd cheese) with added sugar, butter or cream, vanillin and other ingredients (raisins, poppy seeds, condensed milk, berry fillings). It is often coated in a chocolate-based or confectionery glaze; this version is called a glazed curd snack.
Production involves pressing the tvorog into a smooth mass, mixing it with sugar and fat, shaping it into small bars, applying the glaze and rapid chilling. It is a perishable product, sold and stored only chilled. The glazed curd snack is an industrial product of the second half of the 20th century; it is widespread in Eastern Europe and the Baltic states, and in recent years it has also appeared in other countries as a “curd dessert”.
It differs from plain tvorog in its sweetness, dense paste-like texture and added ingredients. Because of the sugar, fat and glaze, it is closer to confectionery than to a classic fermented dairy product, so it is worth checking the ingredients: in some products milk fat is replaced with vegetable fat.
