Also known as: malai kulfi

A dense frozen dessert of the Indian subcontinent: sweetened milk is cooked down for a long time, poured into moulds and frozen without churning. Known since the 16th century, from Mughal times in Delhi.

Kulfi is a dense frozen milk dessert from the Indian subcontinent, often called “traditional Indian ice cream”. Whole milk is cooked down for a long time until it thickens, then sweetened and flavoured with cardamom, saffron, pistachios, almonds or mango. The mixture is poured into moulds (traditionally metal cones) and frozen without churning.

Kulfi appeared in 16th-century Delhi under the Mughal Empire. The word comes from the Persian “qulfi”, a “covered cup”. Thick reduced milk was already popular in local sweets, and under the Mughals it began to be flavoured with pistachios and saffron, packed into metal cones and plunged into an ice mixture. The chronicle Ain-i-Akbari mentions cooling with saltpetre and bringing Himalayan ice to hot regions.

Kulfi differs from ordinary ice cream in that it is not churned while freezing: it contains almost no air, so it is denser, creamier and melts more slowly. It is served on a stick or in slices, often with falooda — sweet vermicelli and rose syrup.
