Dairy desserts are sweet dishes and products based on milk, cream, tvorog (curd cheese) and fermented milk products. They include ice cream, glazed curd snacks and paskha, puddings and mousses, panna cotta, crème brûlée, milk kissel, boiled condensed milk and dulce de leche, as well as many South Asian sweets made from boiled-down milk and fresh cheese, such as kheer, rasgulla and gulab jamun.
Many of these desserts rely on the same physical processes: boiling milk down, during which lactose and proteins caramelise and undergo the Maillard reaction; whipping cream with air bubbles; freezing a mixture of fat, protein and sugar; or curdling milk and then sweetening it. That is why very similar dishes have appeared under different names in cuisines around the world.
Dairy desserts combine the nutrients of milk — protein, calcium — with a lot of sugar and often fat, so in calories they are closer to confectionery than to milk. For people with lactose intolerance, many of them, especially ice cream and desserts made with whole milk, can cause discomfort.
