Also known as: gelato

A frozen mix of milk, cream and sugar.

Ice cream is a frozen dessert made from a mix of milk, cream or butter, sugar and flavourings; milk powder, stabilisers and emulsifiers are often added, and some kinds also contain egg yolk. The mix is prepared, pasteurised, homogenised, held in the cold (“ageing”) and then frozen while being stirred constantly. Whipping fills the mass with air and prevents large ice crystals from forming; after that the ice cream is hardened at a low temperature.

Frozen sweets have been known for a long time, but mass industrial ice cream appeared in the 19th century: the first large-scale production is generally credited to Jacob Fussell in Baltimore in 1851. Mechanical ice cream makers and refrigeration machines helped it spread.

By fat content, milk ice cream, cream ice cream and plombir (the richest) are distinguished; Italian gelato is usually denser and contains less air. Sorbet, unlike ice cream, usually contains no milk, and in a “frozen dessert” the milk fat may be replaced with vegetable fat.

Frequently asked questions

What is the difference between plombir and regular cream ice cream?

The main difference is fat content: plombir has more milk fat (usually around 12–15% or more), cream ice cream less. Milk ice cream is lower in fat still.

What is the difference between ice cream and gelato?

Gelato usually contains less air and fat and is served slightly warmer, so its flavour comes across more intensely.

What is a frozen dessert?

A product similar to ice cream in which some or all of the milk fat is replaced with vegetable fat. This is stated on the packaging.
