🌿 Grape pulp

The juicy middle of the berry, holding sugar and acids.

Grape pulp is the juicy middle of the berry, where sugar and acids are found. The juice comes from it, and wine comes from the juice. In most wine grapes the pulp is pale, almost clear. It is not the pulp but the skin that gives red wine its colour.

How is a berry built? On the outside is the skin, under it the pulp, inside the seeds. The pulp has few tannins, but plenty of water, sugar and fruit acids such as tartaric and malic. As the berry ripens, it gains sugar and loses acid. So growers watch the balance to choose the harvest date.

When grapes are pressed, the pulp turns into juice, called grape must. The must ferments, and the sugar turns into alcohol. This is how the juice of the pulp becomes wine.

In a grape berry the pulp is the main part. It sets the sweetness and freshness of the wine, while the skin and seeds add colour, aroma and tannins.
