🧑🤝🧑 Punjabis
Also known as: Punjabi people
The people of Punjab, the home of lassi.
Punjabis are the people of the historical region of Punjab, now divided between India and Pakistan. It is a fertile plain of “five rivers” with well-developed farming and dairying, where buffaloes and cows are kept. The region is famous for its generous, hearty cuisine, rich in dairy products.
Punjab is considered the birthplace of lassi, a whipped drink of dahi (set curd) and water. Lassi can be sweet, salty or spiced; it is drunk in hot weather and served in tall metal tumblers. Buttermilk (chhach) is also drunk as a refreshing beverage. Butter (makkhan) is used generously: a classic winter dish is maize flour flatbread with mustard greens and a knob of butter.
Ghee, paneer and sweet rice pudding with milk are also a must at family celebrations. Today lassi is popular far beyond Punjab.
