Also known as: fregola, Sardinian fregula, toasted pasta pearls

Sardinian dry pasta of small irregular spheres of durum wheat semolina and water, dried and toasted in the oven until golden.

Fregula (also spelled fregola) is a Sardinian pasta in the form of small irregular spheres of durum wheat semolina and water. It has a rustic shape and a characteristic flavour, and after natural drying and oven toasting it takes on a golden colour.

Fregula is listed among the traditional agri-food products (PAT) of the Sardinia region; the production area given in the regional sheet is the whole island. The name comes from the Latin frisare, "to crumble"; in Italian fregola means a small fragment or crumb.

The sheet lists these production steps: the semolina is kneaded at length with water, the dough is lightly pressed and sorted by size (fregola and fragolone); the pasta is then dried, toasted in the oven, stored in silos and packed. The equipment named is a mixer, rotating drying ovens, silos and a bagging machine. Its ingredients, durum wheat semolina and water, are those of dry durum wheat pasta under Italian DPR 187/2001.

A typical recipe from the sheet is fregula istuvada from Neoneli (province of Oristano): the fregula is boiled in salted water for about 10–12 minutes, then layered in a baking dish with a soffritto, sauce or pork or beef ragù and grated pecorino. The top layer is only fregula and pecorino, dressed with very hot lard. After resting it is cut into slices and served like baked pasta.
