Manicotti
Also known as: manicotto
Large pasta tubes made from semolina, filled and baked in the oven; for example, Barilla sells manicotti for baked dishes.
Manicotti are large tubes of dry semolina pasta that are filled and baked. Barilla says manicotti is one of the oldest pasta shapes still prepared today much as it was originally made: in ancient times pasta dough was cut into large rectangles, filled with flavourful stuffings, then rolled and baked in the oven. Barilla's manicotti are made with semolina.
On the pack Barilla gives a cooking time of 7 minutes, after which the tubes are baked according to the recipe. In its three-cheese recipe the tubes are boiled for 5 minutes, drained and rinsed under cold water, then filled with ricotta, mozzarella, parsley, salt and pepper. They are laid on tomato and basil sauce, covered with more sauce and grated Parmigiano-Reggiano, and baked under foil for 30 to 35 minutes at 375 °F.
Barilla describes manicotti as generous and hearty, suited to robust, flavourful sauces and rich fillings. Sauces can be rich in chunks and abundant in moisture to help the oven baking, for example meat-based sauces such as traditional Bolognese, dairy-based sauces such as a classic béchamel, or vegetable-based sauces.
