Spirals and twists trap sauce in their grooves, so they suit pesto, vegetable sauces and cold pasta salads. Classic dishes for this shape: pesto and pasta alla Norma. Allergens: gluten (wheat). May contain traces of soy and mustard. As with any pasta, use plenty of salted boiling water and toss it with the sauce straight after draining. A common rule is about one litre of water and 7–10 g of salt for every 100 g of pasta. Lubella is a Polish brand from Lublin that grew out of an 1881 steam mill; it has made pasta since 1963 and has belonged to the Maspex Group since 2003.
