🍷 Cultured yeast

Concept ✔ Checked: 10.2026 · sources: 4 Updated:

Selected, dried yeast added for a reliable fermentation.

Cultured yeast is selected and dried wine yeast. The winemaker buys it in a packet and adds it to the juice so that fermentation starts reliably and goes as planned.

These are usually strains of a species that tolerates alcohol well and finishes the sugar. Each strain is chosen for a task: white wine, red wine, sparkling wine. It affects aroma and the speed of fermentation. The advantage of cultured yeast is predictability. There is less risk that fermentation stalls or gives off-smells.

Its opposite is wild yeast, which lives on berries and in the cellar. Such wine ferments on its own, but the result is less predictable. In idea, cultured yeast is like the starter for kefir or yoghurt: you take a ready culture instead of waiting for things to happen by themselves. Both approaches exist worldwide, and neither is the only right one.
