🍷 Filtration of wine

Passing wine through a filter that holds back haze and yeast.

Filtration of wine means passing wine through a filter that holds back haze, yeast and other fine particles. After fermentation wine is often cloudy: yeast cells and sediment remain in it. A filter makes it clear.

Filters come in different kinds. Sheet filters hold back large particles, and membrane filters with very fine pores remove even bacteria and yeast. The last option is called sterile filtration: it is needed so the wine does not ferment again in the bottle. Filtration comes after fining, when the haze has partly settled.

Some winemakers do not filter wine, believing that more taste and aroma are kept. Such wine may be slightly cloudy and have sediment. Filtration is a familiar step in dairying too, where milk is also passed through a filter. For wine it remains the winemaker's choice: quality depends on skill, not on the method.
