🧀 Fiore Sardo
Also known as: Fiore Sardo PDO, Fiore Sardo DOP
Fiore Sardo is an Italian PDO hard cheese made from whole sheep's milk with lamb or kid rennet, produced across Sardinia.
Fiore Sardo is an Italian hard cheese with a protected designation of origin (PDO), made only from whole, fresh sheep's milk. According to the specification, it is produced across the whole of Sardinia. 3 It is known as a shepherds' cheese, traditionally made on the farm from just-milked sheep's milk. 4
Making. The milk is coagulated with lamb or kid rennet. It is an uncooked-curd cheese: the curd is shaped in special moulds that give the wheel its typical look, left briefly in brine and then dry-salted. 3
Look and taste. The wheel is made of two flattened truncated cones joined at their wide bases, giving the heel a "mule's back" profile. It weighs 1.5 to 4 kg, with variations depending on production conditions. The rind is deep yellow to dark brown and the paste white or straw-yellow. The taste is more or less piquant depending on ripeness. Fat is at least 40% of dry matter. 3
Use. It is a table cheese up to three months of ageing and a grating cheese once aged beyond six months. 3
Background. The specification notes that the 1955 decree classed the name as a typical name and a 1974 decree recognised it as a designation of origin. It has been an EU PDO since 1996. 3
Shepherds and industry. Traditional makers work the milk in small copper vats at the fold, while industrial dairies use vats holding thousands of litres. A 2017 report put output at about 200,000 wheels a season, 70% of them industrial, and said fewer shepherds were making the cheese because many sold their milk to dairies instead. 5
The raw-milk dispute. Italian press describes the rules as requiring raw milk. 5 An investigation opened in 2022 suspected some wheels were made from heat-treated milk, after tests found low levels of a heat-sensitive enzyme. Reports of the seizure give more than 270 tonnes worth €1.6 million, others 400 tonnes. The producers denied it, saying normal heating during making lowers the enzyme. In March 2025, 22 shepherds joined the case against seven companies as civil parties. 46
Why it matters to you. Age decides the use: a young wheel goes on the table, one aged over six months goes on the grater. Lamb or kid rennet means it does not suit vegetarians. The dispute also shows what the PDO name cannot tell you on its own, namely who made the wheel and how: if the shepherd's method matters to you, ask about the producer. 35
