Also known as: Grana Padano DOP, Grana Padano PDO

Grana Padano is an Italian PDO hard cheese with cooked curd, made from raw cow's milk partly skimmed by natural creaming and ripened for at least 9 months.

Grana Padano is an Italian hard cheese with a Protected Designation of Origin (PDO), made all year round from raw cow's milk partly skimmed by natural creaming. It is a cooked-curd, slow-ripening cheese used at the table or grated. 3 A single wheel takes about 500 litres of milk. 6

Milk. According to the specification, forage must make up at least half of the dry matter of the cows' daily ration, and at least 75% of the forage dry matter must come from the milk production area. The milk is left to cream naturally at 8–20 °C and may not undergo any treatment that changes its raw status. Lysozyme, an egg-white protein, may be used (up to 2.5 g per 100 kg of milk), except for the Trentingrana type. 3

Making. The milk is coagulated with calf rennet after natural whey starter is added. The curd is broken into fine granules and cooked at up to 56 °C, then kept in moulds for at least 36 hours, which imprint the marks of origin, and brined for 14 to 30 days. Wheels ripen at 15–22 °C and cannot be sold as Grana Padano before nine months. 3

Look and taste. A cylinder 35–45 cm across and 18–25 cm high, weighing 24–40 kg, with a hard, smooth rind 4–8 mm thick, dark or natural golden, without artificial colouring. The paste is hard, finely grainy, breaks into flakes, and is white or straw-coloured, with a fragrant aroma and delicate flavour. Fat is at least 32% of dry matter. Wheels that pass the expert inspection, from the eighth month, are fire-branded. 3

Monks and surplus milk. Tradition credits the Cistercians of Chiaravalle Abbey, founded near Milan in 1135. Draining the marshes created pasture and more milk than people could use, so they needed a way to keep it, and a large cooked, salted, long-ripened cheese solved that. It was first called caseus vetus, old cheese, then "grana" for its grainy paste. This is tradition more than documented record. The consortium dates from 1954, the name became law that year, and the designation followed in 1955. 4567

Why the process is so strict. Skimming happens only by natural creaming, which sets the balance of fat to casein, and nothing may change the milk's raw status. It goes into bell-shaped copper or copper-lined vats with natural whey starter. Before the brand goes on, experts inspect each wheel, and those that fail lose the right to the name. 35

Three ages, three uses. At 9 to 16 months it is mild and milky, with a soft texture, good at the table and when grated. Over 16 months it gains hay and dried-fruit aromas and a grainy, flaky texture with calcium lactate crystals. Riserva, from 20 months, is distinctly grainy and deep yellow, and carries a second fire brand; packs may also say over 24 months. From 12 months a pack may show the actual age as "oltre X mesi". 34

Area. Production, and grating, take place in the listed provinces of Piedmont, Lombardy, Veneto, Emilia-Romagna and Trentino and five municipalities of South Tyrol. The EU register gives 1996 as the protection date. Trentingrana and the scale of the rest. Wheels from Trento province and listed South Tyrol municipalities can carry the Trentingrana mark, if the milk comes from alpine valleys, without silage of any kind and without lysozyme. Elsewhere maize silage is allowed. In 2022, 5,212,103 wheels were made, and about 47 % of marked output was exported, with Germany the largest buyer. 35

Why it matters to you. The age on the pack tells you what you are buying: younger for the table, older for grating or a cheese board. If you avoid egg, check the label for lysozyme, or look for Trentingrana. The consortium says it is lactose-free as a result of how it is made, with under 0.1 g per 100 g, but it remains a salty cheese: the consortium itself counts one portion as about 16 % of the recommended daily sodium. 356
