European oaks from French forests used for expensive barrels.

French oak means European oaks from French forests, used to make expensive wine barrels. Most often it is sessile oak (Quercus petraea) and pedunculate oak. Well-known forests include Tronçais, Allier, Nevers, Vosges and Limousin. The Tronçais forest in the centre of the country is famed for straight trunks and fine growth rings.

The trees are felled at maturity, usually older than 100 years. Staves are split along the grain, dried in the open air for years and assembled into a barrel. The inside of the barrel is toasted over fire. The degree of toast affects the taste of the wine. French oak with its tight fine grain releases tannin and flavour gradually: delicate notes of vanilla, spice and toast. So it suits wines where elegance should be preserved.

French oak is tied to the oak barrel and to the Tronçais forest. It is often compared with American white oak, which is brighter and gives a stronger coconut and vanilla aroma. Barrels of French oak cost more. The choice of wood is part of a wine's style, not in itself a sign of quality.
