🫒 Manzanilla de Sevilla
The world's most widespread olive cultivar; in Spain it grows in Seville, Badajoz and Huelva, and also in the USA, Israel, Argentina and Australia.
Manzanilla de Sevilla is the most widespread olive variety in the world and the most valued among table olives. In Spain it grows in the provinces of Seville (60 thousand hectares), Badajoz (30 thousand) and Huelva (4 thousand), and it is also grown in Portugal, the United States, Israel, Argentina and Australia.
The name means "little apple": the fruit is large, almost round and even. It is black when ripe, and the flesh comes away from the stone easily. The variety has quite a few synonyms, such as Manzanillo, Manzanilla de Carmona and Manzanilla de Dos Hermanas.
The same variety is prepared in different ways. In Spain it is picked green and cured Sevillian style. In the United States the fruit is picked when it is just starting to darken and made into Californian black olives. The fruit holds a medium amount of oil, but the oil is of good quality and keeps well.
The tree is small, so the variety suits dense orchards. It starts bearing early and gives a high, though uneven, crop. Its weak points are cold winters, limestone soils, standing water around the roots, and verticillium wilt and other olive diseases.
