🧑🤝🧑 Mexicans
Goat's milk cajeta, queso fresco and stringy Oaxaca cheese are the core of Mexican dairy cooking.
Mexicans are the people of Mexico, a North American country with Spanish language and ancient Indigenous traditions. Cows and goats were brought to Mexico by the Spanish in the 16th century, and over time dairy became part of the local cuisine. Many cheeses are still made by small family farms, often from raw milk, using skills passed down through generations.
Queso fresco is a soft, fresh white cheese: the milk is heated, curdled and drained; it is not aged and is eaten soon after making, crumbled over tacos, enchiladas and beans. Oaxaca cheese (quesillo) is stretched into long ribbons and wound into a ball, like mozzarella; it melts well in quesadillas. Cajeta is a thick caramel made from goat’s milk and sugar; the cajeta from the city of Celaya is especially famous.
Goat farming in Mexico is concentrated in dry areas: more than 70% of goats are kept on pasture in arid and semi-arid zones. Researchers note that hygiene in production matters for artisanal raw-milk cheeses.
