🌽 Milk stage
Also known as: milky ripeness
The stage at which grain is soft and "milky" inside.
The milk stage is when a grain has already grown but is still soft inside and filled with a white liquid that looks like milk. That is where the name comes from. It is used for wheat, barley, maize and other cereals.
In wheat and barley, the grain is watery at first. Then its contents turn milky. At the middle of the milk stage, the grain has reached full size but is still green. Starch builds up quickly inside. Then the liquid thickens, and the grain moves to the dough stage: it becomes soft like dough but no longer runs. After that comes full ripeness.
In maize, the milk stage comes about 18–22 days after flowering. The kernels are yellow and about 80% water. This is when the cobs are eaten fresh or boiled. If the grain suffers badly from drought at this stage, the harvest may be smaller.
