🥛 Moose milk
Also known as: elk milk
Milk of the moose cow: three times as much protein as cow's milk.
Moose milk is one of the most concentrated milks among hoofed animals. According to the FAO, the milk of the moose cow, like that of the reindeer, is creamlike in consistency: very high in fat and protein (about 10% protein on average), rich in minerals — calcium values of up to 358 mg per 100 g have been reported — and low in lactose, about 2.6% on average and as little as 0.6% in some samples.
The moose is a wild animal and is milked only on a handful of farms where moose are tamed from birth. The FAO mentions such farms in northern Europe, including Sweden. The best known is Älgens Hus (“The Moose House”) in Bjurholm in northern Sweden, where the milk of a few moose cows is made into cheeses considered among the most expensive in the world.
A moose’s lactation is short and seasonal and the yields are small, so moose milk remains a rarity. Because of its low lactose content, the FAO calls it a possible option for people with reduced lactose tolerance, but it has no commercial significance.
