⚡ Energy
Calorie content: the rich milk of northern and mountain animals provides a lot of energy.
Energy is the power the body gets from food, measured in calories. The energy food gives is measured in calories. Milk is not just a drink but a complete food: it gives energy from fat, lactose and protein. 100 ml of cow's milk has about 60–66 kcal. The most “energetic” part is fat: it has the most calories.
The harsher a young animal's life, the fattier and richer the milk. Northern and mountain animals have especially rich milk. According to FAO, yak milk has 5.5–9% fat. Reindeer milk is very fatty. Seal and whale milk is fattier still. Buffalo milk has roughly twice as much fat as cow's milk. For people in the far North, in the mountains and on the steppes, such milk was an important source of strength.
Energy also depends on whether the body has enough iron. Iron is needed for blood to carry oxygen. When there is too little, a person gets tired quickly. Milk has little iron, so it has to come from other foods. For an ordinary city dweller, medium-fat milk is a moderate source of energy.
