Chocolate made with milk powder.

Milk chocolate is chocolate made from cocoa, sugar and milk. Usually milk powder is used. It is the most popular kind of chocolate in the world. It is milder and sweeter than dark chocolate.

Milk chocolate was invented by the Swiss chocolatier Daniel Peter in 1875. He mixed cocoa with condensed milk. The condensed milk was made by his neighbour and friend Henri Nestlé. At first it was a mix for a drink. Milk chocolate bars appeared about ten years later. The main difficulty was water: milk does not mix well with cocoa butter.

Peter found a solution. He dried the mix of cocoa and condensed milk into crumb, then ground it and mixed it for a long time. Milk chocolate is still made this way in Britain, which is why it has a caramel taste. In Germany, France and Belgium, milk powder is used more often, because it contains almost no water. Milk chocolate is high in calories: about 560 kcal per 100 grams.
