Time: 15 minutes · Yield: 4 servings as a side (double for a main)
Ingredients
- 4 large vine tomatoes, cut into irregular wedges
- 1 cucumber, peeled, deseeded and roughly chopped
- ½ red onion, thinly sliced
- 16 Kalamata olives
- 1 tsp dried oregano
- 85 g feta, in chunks (barrel-aged is best)
- 4 tbsp Greek extra virgin olive oil
Method
- Put everything into a large bowl.
- Season lightly with salt and pepper.
- Serve with crusty bread to mop up the juices.
Tips
- Feta is an EU protected designation of origin. It was registered again by Regulation (EC) No 1829/2002 after the EU Court of Justice partly annulled the first registration in 1999.
- The feta area is mainland Greece and the prefecture of Lesvos; in Greece feta is made only from sheep's milk or a mix of sheep's and goat's milk.
