🧀 Salva Cremasco
Also known as: Salva Cremasco PDO, Salva Cremasco DOP, Salva
Salva Cremasco is an Italian PDO soft table cheese made from raw whole cow's milk, matured for at least 75 days with a periodically washed rind.
Salva Cremasco is an Italian cheese with a Protected Designation of Origin (PDO). According to the single document, it is a soft table cheese made only from raw, whole cow's milk of Frisona Italiana and Bruna Alpina cattle.
The cheese is parallelepiped in shape, with flat sides of 11–13 cm or 17–19 cm and a weight of 1.3–1.9 kg or 3–5 kg. The rind is thin and smooth, sometimes mouldy. The paste is generally firm and crumbly, softer just under the rind, and goes from white to straw yellow as it matures. Fat in dry matter is at least 48%.
Maturing lasts at least 75 days, and the rind is periodically washed. The flavour is pleasant and intense, not very salty, with a slightly bitter note reminiscent of green grass.
Milk production, processing and maturing, as well as portioning and packaging, must take place in the provinces of Bergamo, Brescia, Cremona, Lecco, Lodi and Milan. The name recalls the practice of saving (salvare) surplus milk by making this cheese. Labels must show the words Salva Cremasco PDO and the EU logo.
