Hungarian pálinka made from grape pomace.

Törkölypálinka is Hungarian pálinka made from grape pomace. Pomace is the skins, seeds and stems left after the juice is pressed for wine. In Hungarian törköly means pomace, and pálinka is fruit spirit.

The strong drink is made in two steps. First the pomace ferments so that the sugar left in the skins turns into alcohol. Then it is distilled in a still, usually twice. The result is a clear spirit of about 40% strength with a grape aroma. It resembles Italian grappa and French marc. The taste depends on the grape: white varieties give a softer spirit, red and aromatic ones a livelier one.

Törkölypálinka belongs to pomace spirits and is tied to Hungarian wine: it is made where there are vineyards, for example in the Tokaj area. It is a way of using the leftovers of winemaking. It is drunk in small portions, usually after a meal, and of course in moderation.
