Also known as: Altenburg goat cheese

German PDO soft cheese from Thuringia and Saxony: mostly cow's milk with at least 15% goat's milk, a white mould coat and usually caraway.

Altenburger Ziegenkäse is a German soft cheese from the border country of Thuringia and Saxony. Despite the name “goat cheese”, it is mostly cow's milk: goat's milk must make up at least 15 %. It is creamy and mild, with a white mould coat and usually a gentle note of caraway. The name has been an EU PDO since 1997. 145

Why so little goat's milk. The EU file gives a simple reason: in the past people drank their goat's milk themselves, so only a small share went into cheese. Goats were “the poor man's cow” here and an important food in hard times, and the area still keeps them. That history explains the recipe better than any later taste decision. 4

Old roots. A document from 1898 already mentions it as a traditional cheese of the Altenburg area. It began as a raw-milk cheese made on the farm. The 1996 application describes dairy production with the two milks pasteurised separately, so the cheese it describes is no longer the raw-milk one of the past. 4

How it is made. Partly skimmed cow's milk is mixed with at least 15 % goat's milk, then starter cultures and Penicillium candidum, the white mould, are added. It sets at 32–33 °C. The curd is handled so that the paste stays supple with few holes, caraway is mixed in, and the cheese is dry-salted. 4

Why it tastes as it does. The blend gives what the file calls a fine Camembert bouquet with a spicy goat's milk note. For 8–10 days after brief drying, the cheeses are turned several times and treated with mould cultures, which decide the final character. The milk itself reflects hilly farmland with clover-rich fodder. 4

Rules and size. It is a 250 g cylinder or a halved one, ripened at least 14 days, with at least 30 % fat in dry matter and at least 38 % dry matter. The area covers parts of Thuringia, Saxony and Saxony-Anhalt, which is why the local name does not point to one state. 34

Why it matters to you. Look for the red EU seal if you want the real one. Saxony's official guide suggests eating it with bread, with gherkins or beetroot, or diced, breaded and fried over salad. If you want pure goat's cheese, this is not it: check the label. 15
