🧀 Beyaz peynir
Also known as: Turkish white cheese, Ezine cheese
Beyaz peynir is a Turkish brined cheese made from rennet-coagulated curd, eaten fresh or ripened.
Beyaz peynir ('white cheese') is a Turkish brined cheese. According to the Turkish Food Codex Cheese Communiqué, it is made by processing the curd (teleme) obtained by coagulating the raw material with rennet, and it can be fresh or ripened.
The communiqué allows cow's, sheep's, goat's and buffalo milk and suitable mixtures of them as raw material. Milk for cheese eaten fresh must have had at least a pasteurisation-level heat treatment. Pasteurisation is defined as at least 72 °C for 15 seconds or at least 63 °C for 30 minutes, or an equivalent time–temperature combination, confirmed by a negative alkaline phosphatase test.
The communiqué defines a brined cheese as one ripened and/or kept in brine until it is repackaged or sold, and brine as a solution of drinking water and salt. Cheeses are classified by fat content and by ripening status, and both must be stated on the label together with the product name.
The regional name Ezine Peyniri is registered in the EU as a PDO (Commission Implementing Regulation (EU) 2023/2746); it is a protected name, whereas beyaz peynir is the general type.
