🧀 Caşcaval de Săveni
Also known as: Cașcaval de Săveni, Saveni kashkaval
Caşcaval de Săveni is a Romanian PGI semi-hard pasta filata cheese made from cow's milk in Botoşani county.
Caşcaval de Săveni is a Romanian semi-hard cow's milk cheese made in the north of Botoşani county, around the town of Săveni in north-eastern Romania. It is a local form of kashkaval; the name is protected in the EU as a PGI (eAmbrosia file PGI-RO-02361).
The milk is set with rennet to make a curd (caș), which is then scalded in hot salted water and kneaded until it becomes elastic — the pasta filata method. The paste is shaped into wheels and left to ripen.
Its hallmark is long, cold ripening: at least 60 days at 2–8 °C. During this time the paste becomes even and creamy, the colour deepens from cream to pale yellow, and the taste develops walnut notes and a slight bitterness. The aroma grows stronger with age.
The cheese belongs to the pasta filata cheeses and to the cheeses of Romania; related cheeses are Balkan kashkaval and Italian caciocavallo.
How to eat it: sliced with bread, breaded and fried (Romanian cașcaval pane), with polenta (mămăligă) and in bakes. Drink ideas are on Wine and cheese.
Why it matters to you: only cheese from the defined area of Botoşani county, made and ripened to the PGI specification, may be sold as Caşcaval de Săveni.
