📜 Clairette de Die
A fragrant, slightly sweet sparkling wine from the Drôme Valley, mostly from Muscat.
Clairette de Die is an aromatic, slightly sweet sparkling wine from the Drôme valley, in the east of the Rhône Valley in France. The centre of the appellation is the small town of Die. The wine is known for a special way of production.
In the traditional method, called the Dioise method, the wine is not finished in the usual order. First the initial fermentation starts, then the must is chilled and filtered to stop it, and afterwards it is left to ferment in the bottle. Part of the sugar stays in the wine and gives a light sweetness, and the strength is low. The bubbles form naturally.
The main grape is white Muscat, which gives the scent of grapes, flowers and peach. The second grape is Clairette. In the version made from Clairette alone, the wine can be drier.
The name is protected as a PDO, a protected designation of origin. The wine belongs to the sparkling and white wines and is tied to the Rhône Valley. It is served chilled, with desserts and fruit.
