🌱 Coconut milk
For cooking (curries, desserts).
Coconut milk is not juice from the nut. It is made from the grated flesh of a ripe coconut: the flesh is soaked in water and squeezed. The clear liquid inside the nut has a different name: coconut water. The thickest and fattiest part is coconut cream. Ordinary coconut milk for cooking contains up to 20% fat.
Coconut milk is the base of many cuisines in Southeast Asia, South Asia, Oceania and East Africa. It is used to make curries, soups, rice and sweet desserts. That is why in this reference it is linked first of all to cooking. Canned coconut milk for cooking is not meant for drinking. For drinking, a different product is sold: a diluted coconut drink in cartons that replaces milk in coffee or porridge.
Most of the fat in coconut milk is saturated fat. Many health organisations advise limiting it, because it can raise blood cholesterol. Coconut milk has no lactose and no milk protein. In the European Union, the word “milk” is allowed only for milk from animals, but an exception is made for coconut milk.
