🧑🍳 Cook
Also known as: chef
Makes porridges, sauces and baked goods with milk.
A cook prepares food in a restaurant, canteen, café or at home. Milk and dairy foods are among the most common ingredients in the kitchen. Milk is used to cook porridge and to make pancakes, omelettes, mashed potatoes, soups and sauces.
The head cook (the chef) writes the menu and recipes. They check that food is fresh, keep track of stock, cleanliness and safety in the kitchen, and train and guide the other cooks. Ordinary cooks make soups, salads, main courses and desserts under the chef's direction.
A classic example of a milk dish is béchamel sauce. It is a white sauce. Butter and flour are heated together; this mix is called a roux. Then milk or cream is poured in and seasoned with nutmeg. Béchamel is one of the “mother sauces” of French cooking, meaning a base for many other sauces. A similar recipe was first described in François Pierre La Varenne's cookbook in 1651. A recipe called “béchamel” appeared in 1733. The name seems to be linked to Louis de Béchameil, a steward at the court of the French king Louis XIV.
