🏪 Retail and café jobs

Retail and café jobs are the jobs in selling dairy products and preparing dairy dishes and drinks. Jobs in retail and food service are about how dairy products reach people. Shop assistants and merchandisers look after displays, use-by dates and the temperature in refrigerated cabinets. Cheese sommeliers and staff in specialist cheese shops help customers choose cheese and explain where it comes from, while farmers’ market sellers sell the produce of small farms.

In cafés and restaurants milk is one of the main ingredients. Baristas steam and froth milk for cappuccinos and lattes: the density and stability of the foam depend on its fat, protein and temperature. Pastry chefs and cooks make cream sauces, custards, ice cream and baked goods, and in various world cuisines dishes such as paneer, kheer or syrnyky (curd fritters).

Retail and food service staff are also responsible for safety: dairy products must be kept cold, use-by dates observed, and customers warned about milk in dishes, because milk is one of the major food allergens. According to CDC guidance, perishable foods should be kept at no more than 4 °C and not left out in the warm for more than two hours.
