Job ✔ Checked: 10.2026 · sources: 2

Also known as: food technologist

Responsible for recipes and processing settings at the dairy plant.

A dairy technologist is a specialist who designs recipes and processing methods for turning milk into dairy products. A dairy technologist is responsible for how raw milk becomes a finished product. They write the recipes and set the processing conditions: temperature, time, pressure. They make sure these are followed on every line in the plant.

One example is pasteurisation, heating milk to kill dangerous germs. The usual setting is 72 °C for 15 seconds, after which the milk is cooled at once. There is also a slow method: 63 °C for 30 minutes. For long-life milk, ultra-pasteurisation is used: 135–150 °C for a few seconds. The technologist chooses the setting to suit the product. Kefir, yogurt, cottage cheese and milk powder each have their own rules. The technologist also chooses the starter cultures, the helpful bacteria that ferment milk.

The technologist works with the laboratory. They look at test results and work out what went wrong if a product does not turn out right. They come up with new products and improve old ones: changing the taste, the packaging or the shelf life, and looking for ways to make food safer. In English, related jobs are called food technologist and dairy technologist.
