🧀 Emmental français est-central
Also known as: East-Central French Emmental
Emmental français est-central is a French PGI pressed cooked cheese made from raw cow's milk in six departments of eastern France, ripened at least 12 weeks.
Emmental français est-central is a French cheese with a protected geographical indication (PGI), made from raw cow's milk. It is a pressed cooked, salted cheese; milk production, making and ripening all take place in six departments: Doubs, Haute-Marne, Haute-Saône, Jura, Territoire de Belfort and Vosges. 3
Milk. According to the specification, lactating cows graze for at least six months a year, with at least 30 ares of grass per cow. Silage and wrapped bales are banned all year, and the basic forage, at least half of the dry matter of the ration, comes entirely from the production area. The milk is used raw and may not be heated above 40 °C before renneting. 3
Making. The milk is renneted at 31–33 °C with calf rennet. The curd and whey are heated to 50–55 °C and held there at least 30 minutes, then the cheese is pressed for at least 4 hours and brined for 24 to 90 hours. 3
Ripening. The wheel ripens at least 12 weeks (84 days) from making and at most 38 weeks, in three phases: a cold cellar below 17 °C, a warm cellar at 17–24 °C and a cold cellar below 10 °C. 3
Look and taste. Whole wheels weigh 60 to 130 kg and measure 0.70 to 1 m across. The rind is hard and dry, golden yellow to light brown. The paste is ivory, supple and melting, with holes from the size of a cherry to a walnut. The taste is frank and fruity. Fat is at least 45% of dry matter, and dry matter is at least 62 g per 100 g of cheese. 3
Labelling. Each wheel carries a casein plate on the heel with the dairy's number and the words “Emmental français est-central fait dans la région traditionnelle”, plus a second plate showing the day of making. 3
Why here. The area stretches from the Vosges to the Jura, with long winters, plentiful rain and varied meadows. That climate explains the cheese's size: in the Middle Ages a very large wheel could keep summer milk until winter. One wheel can take up to 900 litres, so neighbours pooled their milk in cooperative dairies called fruitières, which still support rural communes. The name has been a PGI since 1996. 3
Why it ripens longer. The silage ban has a practical purpose: it prevents butyric fermentation and off-odours that long ripening would otherwise bring out. This allows at least 12 weeks in the cellar, against 6 for standard French emmental. Holes form in the warm cellar, while slow protein breakdown builds the stronger taste. The milk's protein level is above the French average, and an affineur selects the wheels. 3
Why it matters to you. The word "emmental" alone tells you little about the milk or the age. This name means raw milk, grazing cows and at least 12 weeks of ripening. A wheel weighs 60 kg or more, so you will usually buy a cut piece: check the name on the label or ask to see the casein plate on the wheel. Calf rennet means it does not suit vegetarians. 3
