🍷 Ethanol
The alcohol formed during fermentation that makes you drunk.
Ethanol is ordinary alcohol, formed during fermentation and causing intoxication. Its formula is simple: C2H5OH. It is a colourless liquid that evaporates easily and burns. In drinks it is dissolved in water.
In wine ethanol appears like this: yeast eats the sugar of grape juice and turns it into alcohol and carbon dioxide. This process is called alcoholic fermentation. The more sugar the grapes held, the more alcohol can result. In wine it is usually 9–15 percent by volume, and more in fortified wines.
Ethanol affects the taste and feel of wine: it gives body and a light warmth, although in large amounts it seems harsh. It also causes intoxication, because it acts on the nervous system.
This alcohol in wine is linked with the theme of alcohol and health. In large amounts it is harmful, and a hangover follows excess. It is wise to drink carefully and in moderation, and not to drink at all when driving.
