🥃 Fins Bois
The largest of the six cognac crus, around Grande and Petite Champagne and Borderies: red stony groie soils, round spirits that mature quickly.
Fins Bois is an additional geographical name within the controlled appellation « Cognac » and the largest of the six cognac crus. It surrounds Grande Champagne, Petite Champagne and Borderies in the départements of Charente and Charente-Maritime. The specification describes Fins Bois spirits as round and soft, maturing fairly quickly, with a smell of freshly pressed grapes.
Boundaries. Like the other crus, Fins Bois was outlined by a decree of 13 January 1938. The current AOC Cognac specification, approved on 10 June 2026, lists hundreds of communes, among them Angoulême and Jarnac in Charente, and Saintes, Saint-Jean-d'Angély, Matha and Pons in Charente-Maritime.
Soil and area. According to the specification, « groie » predominates here: shallow red, very stony clay-limestone soils on hard Jurassic limestone, while the rest of the soils are very clayey. Difford's Guide puts the area of the cru at 33,670 hectares; the name means « fine forests », because the area once had a lot of woodland.
How it is used. Difford's Guide notes that Fins Bois spirits are readily used in young blends, because they mature quickly; such spirits feature in the blends of the large houses. The other rules are the same as for any cognac: mainly Ugni blanc, double distillation in a copper Charentais still, ageing only in oak for at least two years, and from 40 % ABV on the market.
Why this matters to you. The words « Fins Bois » mean a cognac from a single cru; « fine forests » is the historic name of the zone, not a judgement of quality. The age is shown by separate markings VS, VSOP or XO. The WHO reminds: there is no safe dose of alcohol.
