🧀 Formaggella del Luinese
Formaggella del Luinese is a semi-hard Italian PDO cheese from whole raw goat's milk, made in the Varese Alpine foothills (Lombardy) and matured at least 20 days.
Formaggella del Luinese is a semi-hard Italian cheese with a protected designation of origin (PDO), made exclusively from whole raw goat's milk. 2 It was the first Italian PDO made entirely from goat's milk, and it comes from the rainy foothills north of Varese, between Lake Maggiore and the Swiss border. 4
All stages, from goat rearing to maturing, take place in the northern part of the province of Varese, the Varese Alpine foothills (Lombardy), in a defined list of municipalities. 2
The milk comes from Camosciata delle Alpi, Nera di Verzasca and Saanen goats and their crosses. Herds stay at pasture for 7–8 months a year; the feed is based on grazing and hay from local mixed meadows, and grass silage is not allowed. 2
Only natural calf rennet is used; the milk curdles at 32–34 °C in 30–40 minutes, and the curd is broken to the size of a maize grain. The cheeses are shaped in 14 cm moulds, salted dry or in brine and matured for at least 20 days. 2
The cheese is cylindrical, 13–15 cm across and 4–6 cm high, weighing 700–900 g. The natural rind is not hard and may show mould; the paste is white, soft and compact, sometimes with small eyes. The flavour is delicate and grows stronger with maturing. 2
Why goats shaped this land. The area is hard to reach and mostly woods and pasture, and goat grazing has shaped it for centuries: paths, watering points and simple shelters called casel still follow the herds. Heavy rain, acid soils and a lake that softens temperature extremes favour heather, broom, birch, hazel, ash and chestnut. Goats traditionally feed on these plants, and studies cited in the specification found some of their aromatic molecules in the cheese, which is the direct link between place and flavour. 2
An old craft on a small scale. The specification records evidence back to the 17th century, and a 1596 expense note from a cardinal's visit already lists local cheese, though it does not prove this exact one. Makers keep old tools: the spino whisk, the cheese harp and small wooden moulds. By 1985 goat farming here had almost vanished, and one founding farmer began with three goats. The consortium counted just seven producers in 2019, while others group up to 10,000. 2456
Why it matters to you: the PDO mark guarantees 100% raw goat's milk from local breeds and production in the Varese foothills. It is sold only as a whole cheese, so check the round label and the branded goat's head. The flavour grows with age: a producer suggests risotto with pear or acacia honey. Because the milk is raw, safety checks matter: in 2020 one lot was recalled over possible E. coli STEC. Calf rennet means it does not suit vegetarians. 257
