Frico Gouda
Frico Gouda is a range of Dutch cow's milk Gouda: young (about 4 weeks) and mature (8–12 weeks).
Frico Gouda is the Gouda range of the Frico brand: a semi-hard Dutch cheese made from cow's milk.
The range has two main ages. Young Gouda matures for about 4 weeks and has a soft, creamy taste of balanced intensity. Mature Gouda ripens for 8–12 weeks, so its flavour is stronger. Both are sold as whole wheels, slices and wedges. The seasonal Liebling der Saison Gouda belongs to the same family, made from May milk (Mai-Gouda) and milk from other seasons.
The cheese is made by the Royal FrieslandCampina cooperative, owned by the farmers who supply the milk.
How to use it: young Gouda goes on sandwiches and melts well in toasties and bakes. Mature Gouda suits a cheese board and can be grated over pasta or vegetables. Keep the cheese wrapped in the fridge so it does not dry out.
