Mlekpol Senator is a range of ripened cheeses made by the Polish dairy cooperative Mlekpol at its plant in Kolno. It includes Senator Emmentaler and Senator Gouda.
According to the producer, Senator cheeses ripen the traditional "dry rind" way: the wheels lie on wooden boards and ripen naturally, exposed to the air. Senator Emmentaler is a hard rennet cheese with a long ripening, a nutty note, many eyes, an elastic golden paste and a natural dry rind; it contains no preservatives. Senator Gouda has a delicate creamy taste and an elastic texture. The cheeses are sold as cylinders, portions and slices.
How to serve: Senator Emmentaler on a cheese board with wine, olives, grapes or salmon, and grated over meat, rice and pasta. Senator Gouda goes on sandwiches and into salads and bakes.
