Frico Maasdam
Frico Maasdam is a Dutch cow's milk Maasdam with large eyes, matured for about 5 weeks.
Frico Maasdam is the Maasdam of the Frico brand: a Dutch semi-hard cow's milk cheese with large eyes.
The eyes form during natural ripening, which takes about 5 weeks for this cheese. The taste is nutty and slightly sweet and the texture is supple. Frico Maasdam is sold as whole wheels, which shops and kitchens cut to order.
Compared with Gouda, Maasdam has bigger eyes and a sweeter taste. The cheese is made by the Royal FrieslandCampina cooperative from the milk of its member farms.
How to use it: slice Maasdam for breakfast and sandwiches, add it to a cheese board with fruit and nuts, or bake it in toasties and hot sandwiches, where it melts evenly. Keep it tightly wrapped in the fridge.
