🥃 Grape syrup

Grape product ✔ Checked: 10.2026 · sources: 4

A thick sweet syrup of boiled-down grape juice, an ancient substitute for sugar.

Grape syrup is a thick sweet syrup made by boiling grape juice down for a long time. It is one of the oldest sugar substitutes: before sugar was common, sweetness came from grapes. The juice is reduced to a half or a third of its volume until it becomes thick.

It is made in many countries. In Turkey it is called pekmez, in Greece petimezi, in Italy sapa, and in Spain a similar product is called arrope. These are variants of one idea with small differences in cooking and taste.

The syrup belongs to grape products, like pomace or raisins. It goes into baking, sauces and sweets, or is eaten with bread or cheese. It keeps for a long time because it contains a lot of sugar. Its taste depends on the grape variety and on how long the juice was cooked.
