🥃 Horno
Spanish for ‘oven’: the chamber where agave hearts are baked for tequila and mezcal; brick and pit ovens are used, and the autoclave is the modern alternative.
Horno is Spanish for ‘oven’. In tequila and mezcal production, the name is given to the chamber where agave hearts, called piñas, are baked. The heat turns the agave’s complex carbohydrates into sugars, which then ferment. The baking method shapes much of the flavour: in a brick oven the agave cooks slowly, over several days, and develops caramel notes.
Types of ovens. The Mexican mezcal standard NOM-070 names three methods: pit ovens (horno de pozo), raised brick ovens (de mampostería) and autoclaves. For mezcal artesanal only a pit or brick oven is permitted; for ancestral only a pit. A pit oven with hot stones gives mezcal its characteristic smoky aroma.
In tequila. The tequila standard calls this stage hydrolysis and does not tie it to a particular oven. Traditional brick or stone ovens heat the piñas with steam: according to Whisky Advocate, the agave bakes there for 36–48 hours and cools for another day. According to Difford’s Guide, at the Olmeca distillery the piñas are baked for 36 hours at 93 °C.
Modern alternatives. The autoclave, a steel pressure vessel, shortens baking to 8–12 hours, and a diffuser washes the sugars out of shredded raw agave in a few hours. Fans of the ovens believe slow baking gives a deeper agave taste, although some respected tequilas are made in autoclaves too.
Why this matters to you. The words ‘horno’ or ‘hornos de mampostería’ on a tequila label mean slow baking of the agave, while ‘horno de pozo’ on a mezcal means a pit oven and a smoky taste. The strength does not change because of this: tequila and mezcal are at least 35% ABV. The WHO reminds us that there is no safe amount of alcohol.

Frequently asked questions
Is it true that all tequila is baked in ovens?
No. The tequila standard only requires hydrolysis of the agave. Many producers use autoclaves or diffusers, while traditional brick ovens remain in some distilleries.
How does a pit oven differ from a brick oven?
A pit oven (horno de pozo) is a hole lined with hot stones where the agave is baked in smoke. A brick oven (de mampostería) is an above-ground chamber of brick or stone, heated with steam.
How long is the agave baked in an oven?
According to Whisky Advocate, 36–48 hours in brick ovens plus cooling; 8–10 hours in an autoclave and 4–6 hours in a diffuser.
Why is mezcal smoky?
Because for mezcal artesanal and ancestral the agave is baked in pit ovens, where smoke from wood and stones penetrates the piñas.
Which ovens are allowed for ancestral mezcal?
According to NOM-070, only pit ovens (hornos de pozo). For artesanal, raised brick ovens are allowed too.
