⚗️ How spirits are made
Fermentation, distillation (below 96% vol.), oak ageing, blending and dilution with water: five steps from grain or fruit to bottle.
Spirit drinks are made in five steps: fermentation, distillation, maturation, blending and dilution with water. Yeast turns sugar into alcohol, distillation separates and concentrates it, ageing in barrels shapes colour and flavour, and blending evens out batches. The limits of each step are set by the drink category and national law.
The law limits distillation: whisky below 94.8% ABV, rum below 96%, grape and fruit distillates below 86%, so that the distillate keeps the aroma of the raw material. Copper pot stills distil in batches, column stills continuously; cognac and Calvados Pays d'Auge are double-distilled.
Maturation is storage in suitable containers for natural reactions. Whisky needs three years in barrels of up to 700 litres, brandy a year in oak of 1000 l or more, or six months in smaller ones. The solera system blends brandy of different ages; charring the barrel with a flame reaching 1950 °C changes the wood's cellulose, hemicellulose and lignin.
Barrels are made by coopers: staves are dried, bent with steam, then charred. According to the Encyclopedia of Modern Ukraine, spirits were first made in Europe in 11th-century Italy; wine spirit was first used as “water of life” and from the 14th century as an intoxicating drink; the first Scottish record of aqua vitae dates from 1494.
Why it matters to you. Strength, colour and age on the label result from these steps. Age is only that of the youngest component; caramel is allowed for colour; “distilled” means the spirit was distilled with botanicals. WHO: no safe level of alcohol exists.

Frequently asked questions
What is distillation?
Heating fermented products to separate and concentrate alcohol. For each category the law sets the highest strength of the distillate: whisky below 94.8% ABV, rum below 96%, wine and fruit distillates below 86%.
Is it true that alcohol is created during distillation?
No. Alcohol is made by yeast during fermentation; distillation only separates it and raises the strength, which is why the law describes spirit drinks as distillation of fermented products.
How long is maturation?
It depends on the category: whisky at least three years in oak barrels of up to 700 l, brandy a year in oak of 1000 l or more or six months in smaller ones, Calvados Pays d'Auge two years.
What is the solera system?
Dynamic ageing in rows of barrels: part is taken from the bottom row and topped up from the previous one. EU regulation defines the average age of such brandy by the volume of stocks and annual withdrawals.
Is it true that the barrel is needed only for colour?
No. A barrel of oak heartwood changes the composition of the drink and adds characteristic aromas; charring changes cellulose, hemicellulose and lignin, and bourbon matures at least 24 months in such a barrel.
